My name is Chris Sloan and I, like so many others, struggled with my weight for years, not realizing the toll being overweight was taking on my body. Lean & Green Beef & Vegetable Soup (Slow Cooker/CrockPot) Ingredients

  • 1 3/4 lbs Boneless lean beef chuck Julienned
  • 2 cup reduced Sodium Beef Stock
  • 1/4 cup Fresh Chives Sliced
  • 1/2 cup Fresh Parsley Chopped
  • 6 cup Frozen non-starchy vegetable mix
  • 1 tsp Salt Divided

Lean & Green Beef & Vegetable Soup (Slow Cooker/CrockPot) Instructions

  1. Combine the beef, stock, and salt in a slow cooker, and cook on high for 2 hours until tender.
  2. Once the beef is tender, add the frozen vegetables and cook for 40 minutes until veggies are tender.
  3. Garnish soup with chives and parsley.
