You know you've hit a major milestone in your healthy eating lifestyle when you can make a healthier version of foods that are typically deemed unhealthy. I know when I started following the 5&1 plan, that's exactly what happened to me. Yes I was eating tons of salads, but they were just not as good as this recipe!

When I first began eating this recipe, I would take it to work and my coworkers would ask if it was a Big Mac… Which led to the name "lean and green Big Mac salad".

For those new to OPTAVAIA, weighing your food is an important part of the OPTAVIA 5 & 1 program; in fact, it's one of the key elements. If you want to be successful, you need to make sure that each meal has been weighed exactly to the guidelines. And we're not talking about "close enough." We mean EXACTLY those amounts! So forget about using a measuring cup or even eyeballing it—you need a food scale!

We've worked hard to make sure that all OPTAVIA 5 and 1 recipes listed are approved for the OPTAVIA optimal weight 5 and 1 plan.

Lean & Green Mini (Big) Mac Salad Ingredients

  • 2 tbsp White Onions Diced
  • 5 oz Lean Ground Beef
  • 2 tbsp Wish-Bone Light Thousand Island Dressing
  • ⅛ tsp White Vinegar
  • ⅛ tsp Onion Powder
  • 3 cup Romaine Lettuce Shredded
  • 2 tbsp Reduced-Fat Cheddar Cheese
  • 1 oz Dill Pickle Sliced
  • 1 tsp Sesame Seeds

Lean & Green Mini (Big) Mac Salad Instructions

  1. Heat a small, lightly greased skillet over medium-high heat. Add the onion & cook until fragrant, about 2-3 minutes. Add the beef and cook until fully browned
  2. Mix together the dressing, vinegar and onion powder.
  3. To assemble: Top lettuce with the ground beef and sprinkle with cheese. Top with pickle slices. Drizzle with sauce, and sprinkle with sesame seeds.
