Place in a large skillet, heating the 4 tsp. of Canola oil on a medium high and cook the soy chorizo crumbles and chicken until brown but not completely through.
Add the minced garlic and scallions and sweat with lid on for approximately 2 minutes.
Add the caulifower rice , tomatoes, and green beans (cut into 1/4'' pieces) to the paella.
Cook for approximately 10 minutes, season with the salt (optional) and pepper, and serve it hot.
