Ingredients

  • 4 (9) oz Boneless Skinless Chicken Breast
  • 1 cup Leeks
  • 2 small Garlic Cloves Minced
  • 1 1/4 cup Low Sodium Chicken Broth
  • 1 (14.5oz.) can Low Sodium Diced Tomatoes
  • 1 tbsp Tomato Paste
  • 2 tsp Creole seasoning
  • 1/4 tsp Cayenne Pepper
  • 1 medium Green Bell Peppers
  • 1 cup Green Onions

Instructions

  1. Place all the ingredients into the crockpot except the green onions. Cover and cook on high for 3 hours.
  2. After the creole chicken has cooked shred the chicken directly in the crockpot to your desired texture.
  3. Top each serving with the green onions.
