  • 9 oz Raw Shrimp
  • 2 tsp Olive Oil Divided
  • 1/2 tbsp Light Butter
  • 1 tsp Garlic Minced
  • 1.25 tsp Fresh Lemon juice
  • 1/2 tsp Fresh Parsley Chopped
  • 1/8 tsp Crushed Red Pepper Flakes
  • 1/2 cup Grape Tomatoes Halved
  • 1 cup Zucchini Noodles
  • 1 tbsp Parmesan Cheese

  1. In a large skillet, on medium-high heat 1 teaspoon of olive oil, add the shrimp and cook for approximately 4-5 minutes.
  2. After the shrimp turns pink, add the butter, garlic, lemon juice, red pepper flakes, parsley, and tomatoes; toss in the pan.
  3. In another skillet heat 1 tsp. of olive oil on medium-high heat, add the zucchini noodles and saute for 1-2 minutes. Do not over cook the zucchini noodles, put in at the last minute.
  4. Put the zucchini noodles on a dish, add the shrimp mixture and sprinkle with 1 Tbsp. fresh Parmesan cheese.
