Ingredients

  • 1/4 cup Green Onions
  • 2 tbsp Fresh Lime Juice
  • 1 tsp Olive Oil
  • 1/8 tsp Salt
  • 1/4 tsp Black Pepper
  • 1.5 cup fresh whole Tomatoes Finely Diced
  • 4.5 oz Avocado Diced
  • 1/4 cup Jalapeno Peppers Finely Diced
  • 14 oz Cooked Shrimp Chopped
  • 1 tbsp Fresh Cilantro Chopped

Instructions

  1. In a small bowl, combine green onions, fresh lime juice, olive oil, 1/16 tsp. salt and 1/8 tsp. pepper. Marinate for 5 minutes to mellow the flavors of the onions.
  2. In a large bowl, combine avocado, tomato, jalapeno peppers (seeds removed) and cooked shrimp (peeled, deveined, chopped). Combine all the ingredients together, add the cilantro and gently toss to mix. Add the remaining salt and pepper to taste.
