Avocado sauce: Mix together 6 oz. smashed avocado, green onion, cilantro, pepper,salt, and lemon juice and set aside.
Preheat a large heavy bottomed skillet on a medium-high heat, add the olive oil and creole seasoning. Add the shrimp and cook until slightly blackened, about 2-3 minutes on each side.
Assemble the bites with the cucumber slices, top with the avocado sauce and shrimp.
