Ingredients

  • 3 medium Multigrain Crackers
  • 1 1/4 lbs Lean Ground Chicken
  • 3 medium Celery Diced
  • 1 large Eggs
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 cup Buffalo Wing Sauce
  • 1/4 cup Low-Fat Ranch Dressing (optional)*

Instructions

  1. Turn on oven and preheat oven to 350°
  2. In a food processor, pulse crackers into breadcrumb like pieces. If you don't have a food processor, you can place in a plastic storage bag and smash till crumbled.
  3. Combine all ingredients, including the cracker crumbs, into a mixing bowl and hand mix.
  4. Shape the mixture into 12 meatballs and place on a lightly greased baking sheet and place in 350° oven to bake for 30 minutes.
  5. Serve with salad dressing and celery sticks.
